Namkeen Steam Roast
Soft, tender, and incredibly juicy, this Namkeen Steam Roast is packed with bold spices and rich flavor. The chicken is marinated, steamed until perfectly tender, then finished with a flavorful coating for a delicious meal.
Ingredients
- 1 whole chicken, about 3–4 lbs, cleaned and cut into large pieces
- 2 tablespoons ginger-garlic paste
- 2 tablespoons lemon juice
- 1 tablespoon red chili flakes
- 1 teaspoon black pepper
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1 teaspoon turmeric powder
- 1½ teaspoons salt, or to taste
- 2 tablespoons yogurt
- 1 tablespoon mustard oil or vegetable oil
- 1 tablespoon green chili paste
- 1 tablespoon chopped fresh coriander
- 1 tablespoon sesame seeds
- 1 tablespoon oil, for finishing
Instructions
- Place the chicken pieces in a large bowl. Add ginger-garlic paste, lemon juice, chili flakes, black pepper, cumin, coriander, garam masala, turmeric, salt, yogurt, mustard oil, and green chili paste.
- Mix thoroughly, making sure every piece of chicken is well coated with the marinade.
- Cover and refrigerate for at least 2 hours. For deeper flavor, marinate overnight.
- Transfer the marinated chicken to a heatproof dish or steamer. Steam over medium heat for about 30–40 minutes, or until the chicken is tender and completely cooked through.
- Remove the chicken from the steamer and let it rest for a few minutes so excess moisture can evaporate.
- Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the steamed chicken pieces and cook for several minutes on each side until lightly browned and slightly crisp on the outside.
- Sprinkle with sesame seeds and fresh chopped coriander.
- Serve hot with naan, roti, rice, salad, or your favorite chutney.
Tip: Cooking time will vary depending on the size of the chicken pieces. Make sure the thickest part of the chicken reaches 165°F (74°C) before serving.
