Mini Meatloaf Muffins with Mashed Potato Frosting
These adorable mini meatloaves are baked in a muffin tin and topped with creamy mashed potatoes like frosting. Fun, comforting, and perfect for family dinners or parties!
Ingredients
Meatloaf Muffins
- 1 lb (450 g) ground beef
- 1/2 cup breadcrumbs
- 1/3 cup milk
- 1 large egg
- 1/2 small onion, finely diced
- 2 cloves garlic, minced
- 1/4 cup ketchup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon dried Italian seasoning
Mashed Potato Frosting
- 2 lbs (900 g) potatoes, peeled and cubed
- 4 tablespoons butter
- 1/3 cup milk or cream (warm)
- Salt, to taste
Optional Topping
- Chopped parsley
- Shredded cheddar cheese
Instructions
- Preheat the oven
Preheat oven to 375°F (190°C). Lightly grease a muffin tin. - Prepare the meatloaf mixture
In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, ketchup, Worcestershire sauce, salt, pepper, paprika, and Italian seasoning. Mix gently until just combined. - Fill the muffin tin
Divide the mixture evenly among the muffin cups, pressing lightly. - Bake
Bake for 20–25 minutes, or until fully cooked and lightly browned. Remove from oven and let rest 5 minutes. - Make the mashed potatoes
Boil potatoes in salted water until fork-tender. Drain, then mash with butter, warm milk, and salt until smooth and creamy. - Frost and serve
Spoon or pipe mashed potatoes on top of each meatloaf muffin. Garnish with parsley or cheese if desired.
