3-Ingredient Avocado Chicken Bakes
Tender, juicy chicken topped with creamy avocado and melted cheese, baked until golden and delicious. This easy low-carb dish requires just three main ingredients and makes a quick, satisfying family dinner.
Ingredients
- 2 large boneless, skinless chicken breasts
- 2 ripe avocados
- 1½ cups shredded mozzarella or cheddar cheese
- Salt and black pepper, to taste
- ½ teaspoon garlic powder, optional
- ½ teaspoon paprika, optional
Instructions
- Preheat the oven: Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
- Prepare the chicken: Slice each chicken breast horizontally to make thinner pieces, or gently pound them to an even thickness. Season both sides with salt, pepper, garlic powder, and paprika if using.
- Add the avocado: Cut the avocados in half, remove the pits, and scoop the flesh into a bowl. Mash lightly with a fork, leaving some small chunks. Season with a little salt and pepper.
- Assemble: Place the chicken breasts in the prepared baking dish. Spread the mashed avocado evenly over each piece of chicken.
- Add the cheese: Sprinkle the shredded cheese generously over the avocado.
- Bake: Bake for 20–25 minutes, or until the chicken is completely cooked through and the cheese is melted and lightly golden. The chicken should reach 165°F (74°C) internally.
- Serve: Let the chicken rest for 5 minutes before serving.
Tip: For extra browning, switch the oven to broil for the final 1–2 minutes, watching carefully so the cheese doesn’t burn.
