Teriyaki Chicken Casserole
This easy and flavorful Teriyaki Chicken Casserole combines tender chicken, fluffy rice, colorful vegetables, and a sweet and savory teriyaki sauce in one delicious baked dish. Perfect for a quick family dinner or meal prep!
Ingredients
For the Casserole
- 1½ pounds boneless, skinless chicken breasts, cut into bite-sized pieces
- 3 cups cooked white or brown rice
- 3 cups mixed stir-fry vegetables
- 1 cup broccoli florets
- 1 red bell pepper, chopped
- 2 green onions, sliced
- 1 tablespoon olive oil
For the Teriyaki Sauce
- ¾ cup low-sodium soy sauce
- ½ cup water
- ¼ cup brown sugar
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 2 tablespoons cornstarch
- 2 tablespoons cold water
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In a saucepan, combine the soy sauce, water, brown sugar, honey, garlic, and ginger. Bring the mixture to a gentle simmer.
- In a small bowl, mix the cornstarch with 2 tablespoons of cold water until smooth. Slowly whisk it into the sauce and cook for a few minutes until the sauce thickens.
- Add the chicken to the prepared baking dish and pour about half of the teriyaki sauce over the chicken. Toss to coat.
- Bake for about 25 minutes, or until the chicken is fully cooked.
- Remove the dish from the oven and carefully shred or stir the chicken.
- Add the cooked rice, broccoli, bell pepper, and mixed stir-fry vegetables. Pour the remaining teriyaki sauce over everything and mix well.
- Return the casserole to the oven and bake for another 10–15 minutes, until the vegetables are tender and everything is hot.
- Remove from the oven and garnish with sliced green onions.

Serve warm as a complete meal, or add a simple cucumber salad or extra steamed vegetables on the side.
