FRESH LIME SHRIMP AVOCADO BOWL

Ingredients
For the Bowl
- 12 oz cooked shrimp, peeled and thawed if needed
- 2 ripe avocados, cut into chunks
- 1½ cups grape tomatoes, halved
- 1 cup cucumber, chopped
- ¼ cup red onion, thinly sliced
- ¼ cup fresh cilantro, chopped
- Lime wedges, for serving
For the Lime Dressing
- 3 tablespoons fresh lime juice
- 2 tablespoons olive oil
- 1 teaspoon honey
- 1 garlic clove, minced
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon chili flakes, optional

1. Make the Lime Dressing
In a small bowl, whisk together the fresh lime juice, olive oil, honey, minced garlic, salt, black pepper, and chili flakes.
Whisk until the dressing is well combined.
2. Prepare the Bowl
Add the cooked shrimp, avocado chunks, grape tomatoes, cucumber, red onion, and fresh cilantro to a large mixing bowl.
Pour the lime dressing over the top.
3. Toss Gently
Gently toss everything together until the shrimp and vegetables are evenly coated.
Be careful not to overmix so the avocado stays in nice chunks.
4. Chill and Serve
For the best flavor, refrigerate for 10–15 minutes before serving.
