RASMALAI MILK CAKE
Soft, creamy, rich, and absolutely irresistible! This Rasmalai Milk Cake combines tender cake slices with a luxurious cardamom-infused milk mixture and fluffy whipped cream. Finished with crunchy pistachios and almonds, it is the perfect dessert for celebrations, family gatherings, or whenever you’re craving something special.
Ingredients
- 8–12 slices of plain cake
- 1 pack thick cream
- 1 liter milk, about 4–5 cups
- 1 can evaporated milk, 160 ml, or regular milk
- ¾ can sweetened condensed milk
- 8–10 cardamom pods
- ½ teaspoon ground cinnamon
- 200 ml whipping cream
- Pistachios, for garnish
- Almonds, for garnish
Instructions
1. Prepare the Rasmalai Milk
Add the milk, evaporated milk, condensed milk, thick cream, cardamom pods, and cinnamon powder to a large pot.
Place the pot over medium-low heat and bring the mixture to a gentle simmer.
Cook for about 15 minutes, stirring occasionally so the milk does not stick to the bottom of the pot.
Once the mixture is fragrant and slightly thickened, remove it from the heat and allow it to cool slightly.
2. Whip the Cream
While the milk mixture is cooling, pour the whipping cream into a large bowl.
Using an electric mixer, beat the cream on medium speed for about 7–8 minutes, or until soft peaks form.
Transfer the whipped cream to a piping bag fitted with a star tip.
This step is optional—you can simply spread the whipped cream over the cake instead.
3. Assemble the Cake
Arrange the cake slices in a large serving dish, making sure they fit snugly together.
Slowly pour half of the warm Rasmalai milk mixture evenly over the cake.
Allow the cake to absorb the milk for a few minutes.
Then pour the remaining milk mixture over the cake, making sure all the pieces are nicely soaked.
4. Add the Whipped Cream
Pipe the whipped cream over the top of the soaked cake in decorative swirls.
Alternatively, spread the whipped cream evenly across the entire surface.
5. Garnish
Generously sprinkle chopped pistachios and almonds over the whipped cream.
6. Chill and Serve
Cover the dish and refrigerate for at least 4 hours, preferably overnight.
Once chilled, slice and serve cold.

- Use a soft plain cake that can absorb the milk mixture well.
- Don’t pour the milk mixture while it is extremely hot. Let it cool slightly first.
- For the best flavor, refrigerate the cake overnight.
