 French Onion Soup Gratinée

A rich and comforting French onion soup made with slowly caramelized onions, savory broth, toasted bread, and plenty of melted cheese. Perfect for a cozy dinner!

Ingredients

  • 4 large onions, thinly sliced
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon all-purpose flour
  • 6 cups beef broth
  • ½ cup dry white wine (optional)
  • 1 teaspoon sugar
  • 1 teaspoon Worcestershire sauce
  • Salt and black pepper, to taste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 French baguette, sliced
  • 2 cups shredded Gruyère cheese or Swiss cheese
  • Fresh parsley for garnish (optional)

Instructions

1. Caramelize the onions

Heat the butter and olive oil in a large pot over medium heat. Add the sliced onions and sugar. Cook slowly, stirring frequently, for about 30–40 minutes, until the onions become deeply golden, soft, and caramelized.

2. Add the garlic and flour

Add the minced garlic and cook for about 1 minute. Sprinkle the flour over the onions and stir well. Cook for another 1–2 minutes.

3. Make the soup

Pour in the white wine, if using, and scrape the bottom of the pot. Add the beef broth, Worcestershire sauce, thyme, bay leaf, salt, and black pepper.

Bring the soup to a gentle boil, then reduce the heat and simmer for 20–25 minutes.

Remove the bay leaf before serving.

4. Prepare the bread

Toast the baguette slices in the oven or in a toaster until crispy and golden.

5. Assemble and gratinate

Preheat the oven broiler.

Divide the hot soup into oven-safe bowls. Place one or two toasted baguette slices on top of each bowl and generously cover with shredded Gruyère or Swiss cheese.

Place the bowls under the broiler for 2–4 minutes, until the cheese is melted, bubbly, and golden brown.

6. Serve

Carefully remove the bowls from the oven, garnish with a little fresh parsley if desired, and serve immediately.
