Best Ever Easy Vegetable Beef Soup

Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 can diced tomatoes, 14.5 oz
  • 2 medium potatoes, peeled and diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 cup green beans, cut into small pieces
  • 1 cup corn, fresh or frozen
  • 1 cup peas, fresh or frozen
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1 bay leaf
  • 2 tablespoons tomato paste
  • 1 tablespoon olive oil

Instructions

  1. Heat the olive oil in a large soup pot over medium heat.
  2. Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks. Drain excess grease if necessary.
  3. Add the diced onion and cook for 3–4 minutes until softened. Add the garlic and cook for another 30 seconds.
  4. Stir in the tomato paste, Italian seasoning, paprika, salt, and black pepper.
  5. Add the beef broth and diced tomatoes. Stir well and bring the soup to a gentle boil.
  6. Add the potatoes, carrots, celery, and green beans.
  7. Reduce the heat, cover, and simmer for about 20–25 minutes, or until the potatoes and vegetables are tender.
  8. Add the corn and peas during the last 5–7 minutes of cooking.
  9. Remove the bay leaf and taste. Adjust the salt and pepper if needed.
  10. Serve hot with warm crusty bread, biscuits, or crackers.

Tips

For an even richer flavor, let the soup simmer for an additional 10–15 minutes. You can also use frozen mixed vegetables to make this recipe even quicker.
