Crispy Caramelized Potatoes and Onions

It’s just potatoes and onions… until you try this simple trick! My uncle swears by it, and it turns ordinary potatoes into a golden, crispy, deeply flavorful side dish that everyone will love.

Ingredients

  • 2 lbs potatoes, peeled and cut into bite-sized pieces
  • 2 large yellow onions, thinly sliced
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon sugar
  • 2 tablespoons water
  • Fresh parsley, chopped, for garnish

Instructions

  1. Prepare the potatoes: Peel the potatoes and cut them into evenly sized pieces. Rinse them under cold water and pat them very dry. Removing excess moisture helps them become beautifully crispy.
  2. Cook the onions: Heat 1 tablespoon of olive oil and the butter in a large skillet over medium heat. Add the sliced onions and a pinch of salt. Cook slowly for 10–15 minutes, stirring occasionally, until the onions become soft and golden.
  3. The trick: Sprinkle the sugar over the onions and add 2 tablespoons of water. Stir well and continue cooking for another 2–3 minutes. This helps the onions caramelize beautifully and gives the potatoes an extra layer of flavor.
  4. Add the potatoes: Increase the heat to medium-high and add the remaining olive oil. Add the potatoes and season with salt, black pepper, garlic powder, paprika, and thyme.
  5. Get them crispy: Spread the potatoes into an even layer and let them cook without stirring for several minutes. Once the bottoms are golden brown, turn them and continue cooking until they’re browned and crispy on the outside and tender inside.
  6. Combine: Stir the caramelized onions back into the potatoes and cook everything together for another 2–3 minutes.
  7. Finish: Taste and adjust the seasoning. Sprinkle with fresh parsley and serve hot.

Uncle’s Secret

Don’t stir the potatoes constantly! Let them sit against the hot pan long enough to develop a deep golden crust. That patience is what makes this simple potato-and-onion dish a game changer.
