 Ingredients

  • 1 package frozen potato-and-cheese pierogies, about 16 ounces
  • 1 pound smoked sausage, sliced into rounds
  • 1 small onion, finely chopped
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 can cream of mushroom soup, 10.5 ounces
  • ½ cup sour cream
  • ½ cup milk
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon black pepper
  • 1 ½ cups shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 2 tablespoons chopped fresh parsley, for garnish

 Instructions

1. Preheat the Oven

Preheat your oven to 375°F. Lightly grease a 9×13-inch baking dish and set it aside.

2. Brown the Smoked Sausage

Heat a large skillet over medium heat. Add the sliced smoked sausage and cook for about 4–5 minutes, turning occasionally, until the sausage is nicely browned around the edges.

Remove the sausage from the skillet and set aside.

3. Sauté the Onion and Garlic

Add the butter to the same skillet. Once melted, add the chopped onion and cook for about 3–4 minutes, until softened.

Add the minced garlic and cook for another 30 seconds, just until fragrant.

4. Make the Creamy Sauce

Reduce the heat to low and add the cream of mushroom soup, sour cream, and milk.

Stir until smooth and creamy.

Season with Italian seasoning, garlic powder, onion powder, and black pepper. Mix well.

5. Assemble the Casserole

Place the frozen pierogies into the prepared baking dish.

Add the browned smoked sausage and gently toss everything together.

Pour the creamy sauce evenly over the pierogies and sausage, making sure everything is well coated.

6. Add the Cheese

Sprinkle the shredded cheddar cheese evenly over the top, followed by the mozzarella.

Don’t be shy with the cheese—the golden, bubbly topping is one of the best parts of this casserole!

7. Bake

Cover the casserole loosely with aluminum foil and bake for 25 minutes.

Remove the foil and continue baking for another 10–15 minutes, or until the pierogies are tender, the sauce is bubbling, and the cheese is melted and lightly golden.

For an extra golden top, you can place it under the broiler for 1–2 minutes, watching carefully so it doesn’t burn.

8. Garnish and Serve

Remove the casserole from the oven and let it rest for about 5 minutes.

Sprinkle with fresh chopped parsley and serve warm.

 What to Serve With It

This casserole is hearty enough to be a complete meal, but it’s also delicious with:

  • A simple green salad
  • Steamed green beans
  • Roasted vegetables
  • Coleslaw
  • Garlic bread
  • A light cucumber salad

 Storage and Reheating

Store leftovers in an airtight container in the refrigerator for up to 3–4 days.

To reheat, place a portion in the microwave until hot, or cover the casserole with foil and warm it in a 350°F oven until heated through.

 Recipe Tips

Use your favorite smoked sausage: Kielbasa, turkey smoked sausage, or another smoked sausage variety all work well.

Add extra cheese: If you love an extra-cheesy casserole, add another handful of cheddar or mozzarella before baking.

Don’t thaw the pierogies: Frozen pierogies can go directly into the casserole, making this recipe especially convenient for busy nights.

Let it rest: Allowing the casserole to sit for a few minutes after baking helps the creamy sauce thicken slightly and makes serving easier.

 The Perfect Comfort Food

Creamy sauce, tender potato-and-cheese pierogies, smoky sausage, and a golden blanket of melted cheese—what’s not to love? This is the kind of dinner that fills the kitchen with an irresistible smell and brings everyone running to the table.

One bite and you’ll understand why this Cheesy Pierogi and Smoked Sausage Casserole is pure comfort food!
