Ingredients
- 2 pounds beef stew meat or chuck roast, cut into bite-sized pieces
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 can cream of mushroom soup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon dried parsley
- 1 teaspoon onion powder
- 1/2 teaspoon dried thyme
- 12 ounces wide egg noodles
- 2 tablespoons butter
- 2 tablespoons chopped fresh parsley, for garnish
Instructions
- Add the beef: Place the beef, diced onion, and minced garlic into the crockpot.
- Make the sauce: Pour in the beef broth and add the cream of mushroom soup, Worcestershire sauce, salt, black pepper, parsley, onion powder, and thyme. Stir well to combine.
- Slow cook: Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the beef is very tender.
- Add the noodles: About 30–40 minutes before serving, stir in the wide egg noodles. Make sure they are mostly covered by the liquid.
- Finish cooking: Cover and continue cooking until the noodles are tender. Stir occasionally so they cook evenly.
- Add butter: Stir in the butter until melted and the sauce becomes rich and creamy.
- Serve: Taste and adjust the seasoning if needed. Sprinkle with fresh parsley and serve warm.
