Strawberry Crunch Cheesecake Bites
Ingredients
For the Crust:
- 1 ½ cups crushed golden sandwich cookies (Golden Oreos or similar)
- ¼ cup melted butter
For the Cheesecake Filling:
- 8 oz (225 g) cream cheese, softened
- ½ cup powdered sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream (cold)
For the Strawberry Crunch Topping:
- 1 cup crushed golden sandwich cookies
- ½ cup crushed strawberry-flavored cookies or strawberry wafers
- 3 tbsp melted butter
Optional Garnish:
- Fresh strawberries
- White chocolate drizzle
Instructions
1️⃣ Prepare the Crust
- Mix crushed cookies with melted butter until combined.
- Press the mixture firmly into mini muffin liners or a lined baking dish.
- Chill in the fridge for 15–20 minutes.
Make the Cheesecake Filling
- Beat cream cheese until smooth.
- Add powdered sugar and vanilla; mix well.
- In a separate bowl, whip heavy cream until stiff peaks form.
- Gently fold whipped cream into the cream cheese mixture.
Assemble
- Spoon or pipe cheesecake filling over the chilled crust.
- Smooth the tops and refrigerate for at least 2 hours (or freeze 1 hour for quicker set).
Strawberry Crunch Topping
- Mix crushed cookies, strawberry cookies, and melted butter until crumbly.
- Sprinkle generously over the cheesecake bites.
Serve
- Garnish with strawberries or drizzle with melted white chocolate if desired.
- Serve chilled and enjoy
Tips
- For extra strawberry flavor, mix 2 tbsp strawberry jam into the cheesecake filling.
- These keep well in the fridge for up to 3 days.
