Creamy Cucumber Tomato Salad
A refreshing, creamy salad made with crisp cucumbers, juicy tomatoes, and a tangy homemade dressing. It’s the perfect side dish for barbecues, picnics, or weeknight dinners!
Ingredients
- 2 large cucumbers, thinly sliced
- 2 cups cherry tomatoes, halved (or 2 large tomatoes, chopped)
- ½ small red onion, thinly sliced
- ½ cup sour cream
- ¼ cup mayonnaise
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh dill (or 1 teaspoon dried dill)
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- Salt and black pepper, to taste
- 1 tablespoon chopped fresh parsley (optional, for garnish)
Instructions
- Wash and slice the cucumbers, tomatoes, and red onion. Place them in a large mixing bowl.
- In a separate bowl, whisk together the sour cream, mayonnaise, lemon juice, dill, garlic powder, onion powder, salt, and pepper until smooth and creamy.
- Pour the dressing over the vegetables and gently toss until everything is evenly coated.
- Cover and refrigerate for at least 20–30 minutes to allow the flavors to blend.
- Garnish with fresh parsley or extra dill before serving, if desired.
Tips
- For extra crunch, sprinkle with crispy bacon bits.
