A refreshing, creamy salad made with crisp cucumbers, juicy tomatoes, and a tangy homemade dressing. It’s the perfect side dish for barbecues, picnics, or weeknight dinners!

Ingredients

  • 2 large cucumbers, thinly sliced
  • 2 cups cherry tomatoes, halved (or 2 large tomatoes, chopped)
  • ½ small red onion, thinly sliced
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh dill (or 1 teaspoon dried dill)
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper, to taste
  • 1 tablespoon chopped fresh parsley (optional, for garnish)

Instructions

  1. Wash and slice the cucumbers, tomatoes, and red onion. Place them in a large mixing bowl.
  2. In a separate bowl, whisk together the sour cream, mayonnaise, lemon juice, dill, garlic powder, onion powder, salt, and pepper until smooth and creamy.
  3. Pour the dressing over the vegetables and gently toss until everything is evenly coated.
  4. Cover and refrigerate for at least 20–30 minutes to allow the flavors to blend.
  5. Garnish with fresh parsley or extra dill before serving, if desired.

Tips

  • For extra crunch, sprinkle with crispy bacon bits.
  • Add shredded cheddar or crumbled feta cheese for even more flavor.
  • Best served chilled and enjoyed within 1–2 days.
