Garlic Parmesan Mushroom Tagliatelle
Ingredients
- 400 g fresh tagliatelle
- 400 g mixed mushrooms (button mushrooms, porcini mushrooms, or wild mushrooms)
- 2 cloves garlic, minced
- 1 small bunch of fresh parsley, chopped
- 40 g grated Parmesan cheese
- 4 tablespoons olive oil
- Salt and black pepper to taste
- A small ladle of pasta cooking water
Instructions
- Bring a large pot of salted water to a boil and cook the tagliatelle according to the package instructions.
- While the pasta cooks, clean and slice the mushrooms.
- Heat the olive oil in a large skillet over medium heat. Add the garlic and cook for about 1 minute.
- Add the mushrooms and cook for 8 to 10 minutes, stirring occasionally, until they become tender and golden brown.
- Season with salt and black pepper, then add the chopped parsley.
- Drain the pasta, reserving a little of the cooking water.
- Add the tagliatelle to the skillet with the mushrooms. Stir in the Parmesan cheese and a little cooking water to create a smooth, creamy sauce.
- Serve immediately with extra Parmesan cheese on top.
