Garlic Parmesan Mushroom Tagliatelle

Ingredients

  • 400 g fresh tagliatelle
  • 400 g mixed mushrooms (button mushrooms, porcini mushrooms, or wild mushrooms)
  • 2 cloves garlic, minced
  • 1 small bunch of fresh parsley, chopped
  • 40 g grated Parmesan cheese
  • 4 tablespoons olive oil
  • Salt and black pepper to taste
  • A small ladle of pasta cooking water

Instructions

  1. Bring a large pot of salted water to a boil and cook the tagliatelle according to the package instructions.
  2. While the pasta cooks, clean and slice the mushrooms.
  3. Heat the olive oil in a large skillet over medium heat. Add the garlic and cook for about 1 minute.
  4. Add the mushrooms and cook for 8 to 10 minutes, stirring occasionally, until they become tender and golden brown.
  5. Season with salt and black pepper, then add the chopped parsley.
  6. Drain the pasta, reserving a little of the cooking water.
  7. Add the tagliatelle to the skillet with the mushrooms. Stir in the Parmesan cheese and a little cooking water to create a smooth, creamy sauce.
  8. Serve immediately with extra Parmesan cheese on top.
