JULY GATHERING VELVETY LOADED POTATO SOUP

A rich, creamy, and comforting potato soup that is perfect for a July gathering or family dinner. This velvety soup is loaded with tender potatoes, crispy bacon, cheddar cheese, and fresh green onions for the ultimate cozy bowl of comfort food.

INGREDIENTS

  • 6 medium russet potatoes, peeled and diced
  • 6 slices bacon, cooked until crispy and crumbled
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup sour cream
  • 3 green onions, thinly sliced

INSTRUCTIONS

  1. In a large pot or Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon, crumble it, and set it aside. Leave about 2 tablespoons of bacon grease in the pot.
  2. Add the butter and chopped onion to the pot. Cook for 4–5 minutes, stirring occasionally, until the onion becomes soft and translucent.
  3. Add the minced garlic and cook for another 30 seconds until fragrant.
  4. Sprinkle the flour over the onions and garlic. Stir continuously for about 1 minute to create a smooth base for the soup.
  5. Slowly pour in the chicken broth while whisking to prevent lumps. Add the milk and heavy cream, stirring until everything is well combined.
  6. Add the diced potatoes, salt, black pepper, and smoked paprika. Bring the soup to a gentle boil, then reduce the heat and simmer for 15–20 minutes, or until the potatoes are tender.
  7. For a velvety texture, use an immersion blender to partially blend the soup. Leave some potato pieces whole for extra texture. You can also transfer a portion of the soup to a blender, blend until smooth, and return it to the pot.
  8. Reduce the heat to low and stir in the shredded cheddar cheese until completely melted and creamy.
  9. Stir in the sour cream and half of the crispy bacon. Taste and adjust the seasoning if needed.
  10. Ladle the hot soup into bowls and top with the remaining crispy bacon, extra shredded cheddar cheese, sliced green onions, and a small spoonful of sour cream.
