Bacon-Wrapped Cheesy Potato Bites

Ingredients

  • 1½ lbs (680 g) baby potatoes
  • 8 oz (225 g) cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped chives
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper, to taste
  • 12 slices thin-cut bacon, cut in half
  • Toothpicks

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Boil the baby potatoes for 15–20 minutes, until just fork-tender. Drain and let them cool slightly.
  3. Slice each potato in half.
  4. In a bowl, mix the cream cheese, cheddar cheese, chives, garlic powder, onion powder, salt, and pepper until smooth.
  5. Spread about 1 teaspoon of the cheese mixture between two potato halves to make a small sandwich.
  6. Wrap each stuffed potato with half a slice of bacon and secure it with a toothpick.
  7. Arrange on the prepared baking sheet.
  8. Bake for 20 minutes, turning halfway through.
  9. Broil for 2–4 minutes, watching closely, until the bacon is golden and crispy.
  10. Let cool for a few minutes before serving.

Tips
