Canadian Cheese Soup
Rich, creamy, and deeply comforting—this classic Canadian-style cheese soup is packed with sharp cheddar flavor and cozy warmth. Perfect for chilly days!
Ingredients
- 4 tablespoons butter
- 1 small onion, finely chopped
- 1 carrot, finely diced
- 1 celery stalk, finely diced
- 3 tablespoons all-purpose flour
- 3 cups chicken broth (or vegetable broth)
- 2 cups whole milk (or half-and-half for extra richness)
- 2½ cups sharp Canadian cheddar cheese, freshly shredded
- ½ teaspoon dry mustard (optional but traditional)
- ½ teaspoon paprika
- Salt and black pepper, to taste
- ¼ teaspoon cayenne pepper (optional, for heat)

Instructions
- Sauté the vegetables
In a large pot, melt the butter over medium heat. Add onion, carrot, and celery. Cook for 5–7 minutes until soft but not browned. - Make the roux
Sprinkle in the flour and stir constantly for 1–2 minutes to remove the raw flour taste. - Add liquids
Slowly whisk in the broth. Let simmer for 5 minutes until slightly thickened. Add milk and stir well. - Season
Add dry mustard, paprika, salt, pepper, and cayenne (if using). Reduce heat to low. - Add cheese
Gradually stir in the shredded cheddar, a handful at a time, until fully melted and smooth. Do not boil. - Blend (optional)
For a smoother soup, blend with an immersion blender or carefully blend in batches. - Taste & adjust
