Cheesy Garlic Biscuit Sloppy Joe Sliders
Golden, flaky cheddar biscuits stuffed with juicy seasoned ground beef and melty cheese. These mini sandwiches are perfect for dinner, parties, game day, or a fun family meal!
Ingredients
For the Beef Filling
- 1 lb (450 g) ground beef
- 1 tablespoon butter or olive oil
- ½ small onion, finely diced
- 2 cloves garlic, minced
- 1 teaspoon Worcestershire sauce
- 1 teaspoon ketchup
- ½ teaspoon Dijon mustard (optional)
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Salt and black pepper, to taste
For the Biscuits
- 1 can (16 oz) refrigerated flaky biscuits (8 biscuits)
- 1½ cups shredded cheddar cheese, divided
Garlic Butter Topping
- 2 tablespoons melted butter
- 1 teaspoon garlic powder
- 1 teaspoon chopped fresh parsley (or ½ teaspoon dried parsley)
Instructions
1. Prepare the Beef
Heat butter in a skillet over medium heat. Add the diced onion and cook for 3–4 minutes until softened. Stir in the garlic and cook for another 30 seconds.
Add the ground beef and cook until browned, breaking it into small crumbles. Drain any excess grease.
Mix in the Worcestershire sauce, ketchup, mustard, paprika, garlic powder, onion powder, salt, and pepper. Cook for 2–3 more minutes, then remove from the heat.
2. Prepare the Biscuits
Preheat the oven to 375°F (190°C).
Separate each biscuit into two thinner layers, or gently flatten each biscuit with your hands into a 3-inch round.
3. Assemble
Place half of the biscuit rounds on a parchment-lined baking sheet.
Sprinkle a little shredded cheddar cheese on each bottom biscuit.
Add about 2 tablespoons of the cooked beef mixture.
Top with a little more cheese.
Cover with the remaining biscuit rounds and pinch the edges lightly to help seal.
4. Add Garlic Butter
Mix the melted butter with the garlic powder and parsley.
Brush the tops of the biscuits generously with the garlic butter mixture.
5. Bake
Bake for 15–18 minutes, or until the biscuits are puffed and deep golden brown.
If desired, broil for 1–2 minutes at the end for extra color.
6. Serve
Let cool for 5 minutes before serving.
Serve warm with:
- French fries
- Potato wedges
- Coleslaw
- Pickles
- Ranch dressing or burger sauce for dipping
Tips
- Use sharp cheddar for extra flavor.
- Add cooked bacon, diced jalapeños, or sautéed mushrooms to the filling for variety.
