Pineapple Brown Sugar Mississippi Lil’ Smokies Bites
Sweet, smoky, sticky, and absolutely addictive—these bacon-wrapped bites are the first thing to disappear at any party!
Ingredients
- 1 package (14 oz) Lil’ Smokies (cocktail sausages)
- 1 lb (450 g) bacon (regular cut, not thick), cut into thirds
- 1 can (20 oz) pineapple chunks, well drained
- 1 cup light brown sugar, packed
- Toothpicks
Instructions
- Preheat oven to 375°F (190°C).
Line a baking sheet with foil and place a wire rack on top (optional but helps with crisping). - Assemble the bites
- Wrap each Lil’ Smokie with ⅓ slice of bacon.
- Add one pineapple chunk on top or alongside the sausage.
- Secure with a toothpick.
- Coat with brown sugar
- Place the wrapped bites in a baking dish or on the rack.
- Sprinkle brown sugar generously over each one (or roll them lightly in sugar).
- Bake uncovered for 35–45 minutes, until:
- Bacon is fully cooked and caramelized
- Sugar is bubbly and golden
- Optional extra caramelization
- Broil for 1–2 minutes at the end (watch closely!).
- Serve warm and enjoy the sticky, sweet-savory magic
Tips
- For extra flavor, add a pinch of chili flakes or black pepper to the brown sugar.
- Drain pineapple very well to avoid excess liquid.
