 Pineapple Brown Sugar Mississippi Lil’ Smokies Bites

Sweet, smoky, sticky, and absolutely addictive—these bacon-wrapped bites are the first thing to disappear at any party!

 Ingredients

  • 1 package (14 oz) Lil’ Smokies (cocktail sausages)
  • 1 lb (450 g) bacon (regular cut, not thick), cut into thirds
  • 1 can (20 oz) pineapple chunks, well drained
  • 1 cup light brown sugar, packed
  • Toothpicks

 Instructions

  1. Preheat oven to 375°F (190°C).
    Line a baking sheet with foil and place a wire rack on top (optional but helps with crisping).
  2. Assemble the bites
    • Wrap each Lil’ Smokie with ⅓ slice of bacon.
    • Add one pineapple chunk on top or alongside the sausage.
    • Secure with a toothpick.
  3. Coat with brown sugar
    • Place the wrapped bites in a baking dish or on the rack.
    • Sprinkle brown sugar generously over each one (or roll them lightly in sugar).
  4. Bake uncovered for 35–45 minutes, until:
    • Bacon is fully cooked and caramelized
    • Sugar is bubbly and golden
  5. Optional extra caramelization
    • Broil for 1–2 minutes at the end (watch closely!).
  6. Serve warm and enjoy the sticky, sweet-savory magic

 Tips

  • For extra flavor, add a pinch of chili flakes or black pepper to the brown sugar.
  • Drain pineapple very well to avoid excess liquid.
  • Perfect for parties, potlucks, game day, or holidays.
