Bacon-Wrapped Cheddar Stuffed Chicken
Ingredients
- 2 large chicken breasts
- 60 g shredded cheddar cheese
- 6 slices smoked bacon
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt and black pepper, to taste
- 1 teaspoon dried parsley (optional)
- Toothpicks, if needed
Instructions
- Preheat the oven to 200°C / 400°F. Lightly grease a baking dish or line a tray with parchment paper.
- Prepare the chicken breasts by slicing a pocket into the side of each one. Be careful not to cut all the way through.
- Season the chicken inside and out with salt, pepper, garlic powder, onion powder, and paprika.
- Stuff each chicken breast with shredded cheddar cheese, dividing it evenly between both pieces.
- Wrap the chicken with bacon, using 3 slices per breast. Wrap tightly to help keep the cheese inside while cooking. Secure with toothpicks if necessary.
- Optional step for extra flavor: Heat olive oil in a skillet over medium heat and sear the wrapped chicken for 2–3 minutes per side until the bacon starts to brown.
- Transfer to the oven and bake for 25 to 30 minutes, or until the chicken is fully cooked and the internal temperature reaches 74°C / 165°F.
- For crispier bacon, switch the oven to broil for the last 2–3 minutes, watching carefully so it doesn’t burn.
- Let the chicken rest for 5 minutes before serving. Sprinkle with parsley if desired.
