Baked Pesto Mozzarella Chicken
Ingredients
- 3 boneless, skinless chicken breasts
- 3–4 tablespoons pesto sauce
- 1 cup shredded mozzarella cheese
- 1 cup cherry tomatoes
- 3 garlic cloves, minced
- 2 tablespoons olive oil
- Salt, to taste
- Black pepper, to taste
- 1 teaspoon Italian seasoning or oregano (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Lightly grease a baking dish with a little olive oil.
- Season the chicken breasts with salt and black pepper.
- Place the chicken in the baking dish.
- Spread a generous spoonful of pesto over each chicken breast.
- Sprinkle the minced garlic over the chicken and around the dish.
- Add the cherry tomatoes around the chicken, then drizzle them with a little olive oil and a pinch of salt.
- Bake for 20–25 minutes, or until the chicken is fully cooked.
- Remove the dish from the oven and top each chicken breast with mozzarella cheese.
- Return to the oven for 5 more minutes, or broil for 2–3 minutes until the cheese is melted and lightly golden.
- Serve hot and enjoy!
Tips
- For extra flavor, sprinkle a little Parmesan cheese on top with the mozzarella.
- Serve it with rice, pasta, mashed potatoes, or toasted bread.
- If your chicken breasts are very thick, slice them slightly or pound them thinner so they cook evenly.
