Hawaiian Pineapple Coconut Fluff

A light, creamy, and refreshing no-bake dessert—perfect for potlucks, BBQs, or summer gatherings!

 Ingredients

  • 1 (20-oz) can crushed pineapple, undrained
  • 1 (3.4-oz) box instant vanilla pudding mix
  • 1 (8-oz) container whipped topping, thawed
  • 1 cup sweetened shredded coconut
  • 1 cup mini marshmallows (optional)
  • ½ cup chopped walnuts or pecans (optional)

 Instructions

  1. In a large bowl, add the crushed pineapple with its juice.
  2. Sprinkle the instant vanilla pudding mix over the pineapple and stir well until thickened.
  3. Gently fold in the whipped topping until smooth and creamy.
  4. Stir in the shredded coconut, marshmallows, and nuts if using.
  5. Cover and refrigerate for at least 1 hour before serving.

 Tips

  • Add chopped maraschino cherries for extra color and flavor
  • Best served chilled and even better the next day
  • Great as a dessert or sweet side dish
