Perfect Éclairs – Light, Creamy & Absolutely Irresistible!

Ingredients
For the Custard Filling (11–12 éclairs)
- 2 eggs
- 70 g (2.4 oz) sugar
- 30 g (1 oz) cornstarch
- 500 ml (2 cups) milk
- 1 tsp vanilla extract
- 30 g (2 tbsp) butter
For the Choux Pastry
- 125 ml (½ cup) water
- 125 ml (½ cup) milk
- 100 g (7 tbsp) butter
- 1 tbsp sugar
- Pinch of salt
- 150 g (1¼ cups) all-purpose flour
- 4 eggs
For the Chocolate Glaze
- 100 g (3.5 oz) dark chocolate
- 60 ml (¼ cup) heavy cream
Instructions
Step 1: Make the Custard
- In a bowl, whisk together the eggs, sugar, and cornstarch until smooth.
- Heat the milk in a saucepan until just beginning to simmer.
- Slowly pour the hot milk into the egg mixture while whisking constantly.
- Return everything to the saucepan and cook over medium heat, stirring continuously until thick.
- Remove from heat and stir in vanilla and butter.
- Cover the surface with plastic wrap and let cool completely.
Step 2: Prepare the Choux Pastry
- Preheat oven to 200°C (400°F).
- In a saucepan, combine water, milk, butter, sugar, and salt. Bring to a boil.
- Add flour all at once and stir vigorously until the dough forms a ball and pulls away from the sides.
- Cook for 1 minute, stirring constantly.
- Transfer dough to a bowl and let cool for 5 minutes.
- Add eggs one at a time, mixing well after each addition until smooth and glossy.
- Transfer dough to a piping bag fitted with a large star tip.
- Pipe 10–12 cm (4–5 inch) strips onto a parchment-lined baking tray.
- Bake for 30–35 minutes until puffed and golden brown.
- Cool completely on a wire rack.
Step 3: Fill the Éclairs
- Transfer the cooled custard to a piping bag fitted with a small tip.
- Make small holes in the bottom or ends of each éclair.
- Pipe the custard into the shells until filled.
Step 4: Make the Chocolate Glaze
- Heat the cream until hot but not boiling.
- Pour over the chopped chocolate and let sit for 1 minute.
- Stir until smooth and glossy.
- Dip the tops of the éclairs into the glaze and allow to set.
Serving Tips
- Chill for 30 minutes before serving for the best texture.
- Dust with powdered sugar or decorate with chocolate shavings.
- Store refrigerated for up to 3 days.
