Crockpot Queso Chicken and Rice – A Crowd-Pleasing Comfort Food Favorite

My Amish neighbor showed me this simple recipe years ago, and it quickly became one of those meals everyone asks for again and again. The creamy queso, tender chicken, and perfectly cooked rice come together in the slow cooker for a hearty dinner that’s packed with flavor. Every time I serve it, guests go absolutely bonkers over it!

Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 jar (15 oz) queso cheese dip
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 small onion, diced
  • 1 cup chicken broth
  • 1 cup long-grain white rice
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • ½ tsp cumin
  • Salt and pepper, to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Place chicken breasts in the crockpot.
  2. Sprinkle with garlic powder, chili powder, cumin, salt, and pepper.
  3. Add diced tomatoes, onion, chicken broth, and queso cheese dip.
  4. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  5. Remove chicken and shred with two forks.
  6. Return shredded chicken to the crockpot and stir well.
  7. Add the uncooked rice and mix thoroughly.
  8. Cover and cook on HIGH for 30–45 minutes, until the rice is tender.
  9. Stir in the shredded cheddar cheese until melted and creamy.
  10. Garnish with cilantro if desired and serve hot.

Tips

Add black beans or corn for extra texture and flavor.

Top with sliced jalapeños if you like a little heat.

Serve with tortilla chips, warm tortillas, or a fresh salad.
