The Best Skillet T-Bone Steak
Ingredients
- 2 T-bone steaks (about 1–1.5 inches thick)
- 2 tbsp olive oil
- 2 tbsp butter
- 3–4 cloves garlic, smashed
- 2–3 sprigs fresh rosemary or thyme
- Salt and freshly ground black pepper, to taste
Instructions
- Prep the Steak:
- Remove steaks from the fridge 30–60 minutes before cooking to bring to room temperature.
- Pat them dry with paper towels to get a good sear.
- Generously season both sides with salt and black pepper.
- Heat the Skillet:
- Place a heavy skillet (preferably cast iron) over high heat.
- Add olive oil and heat until shimmering but not smoking.
- Sear the Steak:
- Carefully place steaks in the hot skillet.
- Sear without moving for 3–4 minutes until a deep brown crust forms.
- Flip and sear the other side for another 3–4 minutes.
- Add Butter & Aromatics:
- Reduce heat to medium.
- Add butter, garlic, and rosemary/thyme to the skillet.
- Tilt the skillet slightly and spoon the melted butter over the steaks repeatedly (basting) for 1–2 minutes.
- Check Doneness:
- For medium-rare: cook to internal temp 130–135°F (54–57°C).
- For medium: 140–145°F (60–63°C).
- Use a meat thermometer for accuracy.
- Rest the Steak:
- Transfer steaks to a cutting board.
- Tent loosely with foil and let rest for 5–10 minutes to lock in juices.
- Serve:
- Slice against the grain if desired.
- Drizzle with the garlic-herb butter from the skillet.
- Serve with your favorite sides: roasted veggies, mashed potatoes, or a crisp salad.
