Easy Chocolate Chip Cookie Pie 

Ingredients

  • 1 unbaked 9-inch pie crust
  • 1/2 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup chocolate chips (semi-sweet or milk chocolate)
  • Optional:
    • 1/2 cup chopped walnuts or pecans

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Place the unbaked pie crust into a 9-inch pie dish and set aside.
  3. In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth.
  4. Add the eggs and vanilla extract, mixing well until fully combined.
  5. Stir in the flour, baking powder, and salt just until incorporated.
  6. Fold in the chocolate chips (and nuts if using).
  7. Pour the cookie filling evenly into the prepared pie crust.
  8. Bake for 35–40 minutes, or until the center is set and the top is golden brown.
    • If the crust browns too quickly, loosely cover the edges with foil.
  9. Remove from the oven and allow to cool for at least 20 minutes before slicing.

Serving Suggestions

  • Serve warm with a scoop of vanilla ice cream
  • Drizzle with chocolate or caramel sauce
  • Enjoy with a cup of coffee or milk

Storage

  • Store covered at room temperature for up to 2 days, or refrigerate for up to 5 days.
  • Reheat slices slightly for a warm, gooey texture.
