 Ingredients

For the Chicken Salad:

  • 3 cups cooked chicken, shredded or chopped
  • ½ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1 celery stalk, finely chopped
  • 2 tablespoons red onion, finely diced
  • Salt and black pepper to taste

For the Sandwich:

  • 8 slices toasted bread
  • 8 strips crispy bacon
  • 1 large tomato, sliced
  • Lettuce leaves
  • Optional: sliced avocado or cheese

 Instructions

  1. In a large bowl, combine the chicken, mayonnaise, Dijon mustard, lemon juice, celery, and red onion. Mix until creamy and well combined. Season with salt and pepper.
  2. Cook the bacon until crispy, then place on paper towels to drain excess grease.
  3. Toast the bread slices until golden and crisp.
  4. Assemble the sandwiches by layering lettuce, tomato slices, a generous scoop of chicken salad, and crispy bacon on the toasted bread.
  5. Add avocado or cheese if desired, then top with another slice of toast.
  6. Slice in half and serve immediately with chips, fries, or a pickle on the side.

Tips

  • Rotisserie chicken works perfectly for quick prep.
  • Chill the chicken salad for 30 minutes for even better flavor.
  • Add chopped pickles for extra crunch and tang.
