Loaded BLT Chicken Salad Sandwich
Ingredients
For the Chicken Salad:
- 3 cups cooked chicken, shredded or chopped
- ½ cup mayonnaise

For the Sandwich:

Instructions
- In a large bowl, combine the chicken, mayonnaise, Dijon mustard, lemon juice, celery, and red onion. Mix until creamy and well combined. Season with salt and pepper.
- Cook the bacon until crispy, then place on paper towels to drain excess grease.
- Toast the bread slices until golden and crisp.
- Assemble the sandwiches by layering lettuce, tomato slices, a generous scoop of chicken salad, and crispy bacon on the toasted bread.
- Add avocado or cheese if desired, then top with another slice of toast.
- Slice in half and serve immediately with chips, fries, or a pickle on the side.
