Whole Roasted Cheesy Cauliflower

This whole roasted cauliflower is crispy on the outside, tender on the inside, and loaded with cheesy, smoky flavor. It’s simple, comforting, and honestly one of the best ways to enjoy cauliflower!

Ingredients

  • 1 whole head of cauliflower
  • 1/2 cup mayonnaise
  • 1 cup shredded smoked sharp cheddar cheese
  • 1 teaspoon paprika
  • Salt, to taste
  • Black pepper, to taste

Optional Add-Ins

  • Garlic powder
  • Onion powder
  • Crushed red pepper flakes
  • Parmesan cheese
  • Fresh parsley for garnish

Instructions

Step 1: Prep the Cauliflower

Remove the leaves and carefully trim the stem while keeping the cauliflower head intact.

Bring a large pot of salted water to a boil. Place the cauliflower upside down into the boiling water and cook for 7–8 minutes. If you like it softer, boil a few minutes longer.

Remove carefully and let it cool for a few minutes so excess moisture drains away.

Step 2: Make the Cheesy Coating

In a bowl, mix together:

  • Mayonnaise
  • Shredded smoked sharp cheddar
  • Paprika
  • Salt
  • Pepper
  • Any additional seasonings you like

Stir until well combined.

Step 3: Coat the Cauliflower

Preheat your oven to 400°F (200°C).

Place the cauliflower on a baking dish or lined tray. Spread or pat the cheesy mayo mixture all over the cauliflower using your hands or a spoon.


Step 4: Roast

Bake for about 20 minutes, or until the top is golden, bubbly, and slightly crispy around the edges.

Tips

  • For extra crispiness, broil the cauliflower for the last 2–3 minutes.
  • Smoked cheddar gives amazing flavor, but mozzarella, gouda, or parmesan also work well.
  • Let it rest a few minutes before slicing for cleaner servings.
