Crockpot Pork with Apricot Preserves
Ingredients
- 2 to 3 lbs pork loin or pork shoulder
- 1 cup apricot preserves
- 1 packet onion soup mix
- 1/2 cup barbecue sauce
- 2 tablespoons soy sauce
- 3 cloves garlic, minced
- 1 small onion, sliced
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Prepare the Pork
Pat the pork dry with paper towels and season lightly with black pepper. - Optional Sear for Extra Flavor
Heat olive oil in a skillet over medium-high heat. Sear the pork for 2–3 minutes per side until lightly browned. This step adds extra flavor but can be skipped if you’re short on time. - Make the Sauce
In a bowl, mix together the apricot preserves, barbecue sauce, soy sauce, garlic, and onion soup mix until smooth. - Assemble in the Crockpot
Place the sliced onions in the bottom of the crockpot. Add the pork on top, then pour the apricot sauce mixture over everything. - Slow Cook
Cover and cook:- LOW for 6–8 hours
or - HIGH for 4–5 hours
The pork should become tender and easy to shred.
- LOW for 6–8 hours
- Serve
Slice or shred the pork and spoon the delicious apricot glaze over the top. Serve with mashed potatoes, rice, or roasted vegetables.
Tips
- Add red pepper flakes if you like a sweet-and-spicy flavor.
- Pork shoulder gives a richer, fall-apart texture.
- Leftovers make amazing sandwiches the next day.
