Crockpot Pork with Apricot Preserves

Ingredients

  • 2 to 3 lbs pork loin or pork shoulder
  • 1 cup apricot preserves
  • 1 packet onion soup mix
  • 1/2 cup barbecue sauce
  • 2 tablespoons soy sauce
  • 3 cloves garlic, minced
  • 1 small onion, sliced
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Prepare the Pork
    Pat the pork dry with paper towels and season lightly with black pepper.
  2. Optional Sear for Extra Flavor
    Heat olive oil in a skillet over medium-high heat. Sear the pork for 2–3 minutes per side until lightly browned. This step adds extra flavor but can be skipped if you’re short on time.
  3. Make the Sauce
    In a bowl, mix together the apricot preserves, barbecue sauce, soy sauce, garlic, and onion soup mix until smooth.
  4. Assemble in the Crockpot
    Place the sliced onions in the bottom of the crockpot. Add the pork on top, then pour the apricot sauce mixture over everything.
  5. Slow Cook
    Cover and cook:

    • LOW for 6–8 hours
      or
    • HIGH for 4–5 hours

    The pork should become tender and easy to shred.

  6. Serve
    Slice or shred the pork and spoon the delicious apricot glaze over the top. Serve with mashed potatoes, rice, or roasted vegetables.

Tips

  • Add red pepper flakes if you like a sweet-and-spicy flavor.
  • Pork shoulder gives a richer, fall-apart texture.
  • Leftovers make amazing sandwiches the next day.
