Strawberry Cheesecake Cookies
Ingredients:
- 1 box (15.25 oz) strawberry cake mix
- 1/3 cup vegetable oil
- 2 large eggs
- 4 oz cream cheese, softened
- 1/2 teaspoon vanilla extract
- 1/2 cup white chocolate chips (optional but recommended)
- Powdered sugar, for rolling (optional)
Instructions:
- Preheat the oven to 350°F (175°C).
Line a baking sheet with parchment paper. - In a large bowl, beat the softened cream cheese until smooth and creamy.
- Add the eggs, vegetable oil, and vanilla extract. Mix well until fully combined.
- Gradually add the strawberry cake mix and stir until a soft, slightly sticky dough forms.
- Fold in the white chocolate chips if using.
- Scoop the dough using a tablespoon or cookie scoop.
(Optional) Roll each dough ball lightly in powdered sugar for a crackled look. - Place cookies on the prepared baking sheet, leaving about 2 inches between each.
- Bake for 10–12 minutes, or until the edges are set but the centers are still soft.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

- Do not overbake — these cookies should stay soft and chewy.
- If the dough is too sticky, chill it for 15–20 minutes before baking.
- For extra cheesecake flavor, you can swirl small cubes of cream cheese into the dough.
