Prep Time

Chill Time

1–2 hours

Total Time

About 1 hour 30 minutes

Yield

20–24 truffles

Ingredients

  • 1 cup cream cheese, softened
  • 2 tablespoons unsalted butter, softened
  • 1½ cups powdered sugar (plus more for coating)
  • ½ cup maraschino cherries, finely chopped
  • 2 tablespoons maraschino cherry juice
  • 1 teaspoon vanilla extract
  • 1 cup crushed vanilla wafers or graham crackers
  • ½ cup shredded coconut (optional, for coating)

Instructions

  1. Make the Creamy Base
In a mixing bowl, beat the cream cheese and butter together until smooth and fluffy.
  2. Add Sweetness & Flavor
Gradually mix in the powdered sugar, vanilla extract, and cherry juice until fully combined.
  3. Fold in Cherries
Gently stir in the finely chopped maraschino cherries and crushed vanilla wafers (or graham crackers). The mixture should be soft but firm enough to roll.
  4. Chill the Mixture
Cover and refrigerate for at least 1 hour, or until the mixture is firm.
  5. Shape the Truffles
Scoop about 1 tablespoon of the mixture and roll it into a ball using your hands.
  6. Coat the Snowballs
Roll each truffle in powdered sugar or shredded coconut until fully coated.
  7. Final Chill
Place the truffles back in the refrigerator for 30 minutes before serving.

Tips for Best Results

  • Pat the cherries dry with paper towels to prevent excess moisture.
  • If the mixture feels too soft, add a little more crushed wafers.
  • For extra flavor, add ¼ teaspoon almond extract.
  • Re-roll in powdered sugar just before serving for a fresh “snowy” look.

Serving & Storage

  • Serve chilled for the best texture.
  • Store in an airtight container in the refrigerator for up to 5 days.
  • These truffles also freeze well for up to 1 month.

If you want, I can also give you:

  • a chocolate-dipped version
  •  a holiday variation
  •  a no-bake coconut cherry version
