CHEESY & CRISPY GARLIC ZUCCHINI STEAKS

INGREDIENTS:
• 2 large zucchini
• 2 tbsp olive oil or melted butter
• 3 garlic cloves, minced
• 1 tsp Italian seasoning
• ½ tsp paprika
• Salt and black pepper to taste
• 1 cup shredded mozzarella cheese
• ¼ cup grated Parmesan cheese
• 1 tbsp fresh parsley, chopped
INSTRUCTIONS:
Preheat oven to 220°C (425°F).
Line a baking tray with parchment paper or lightly grease it.
Slice zucchini lengthwise into thick “steaks.”
Pat dry with paper towels to remove extra moisture.
In a small bowl, mix olive oil, garlic, Italian seasoning, paprika, salt, and pepper.
Brush both sides of zucchini steaks with the garlic mixture.
Arrange on the baking tray and bake for 10–12 minutes.
Remove from oven and top with mozzarella and Parmesan cheese.
Bake another 8–10 minutes until cheese is melted and bubbly.
Broil for 2–3 minutes for crispy golden edges.
Garnish with parsley and serve hot
