Keto Loaded Cucumber Salad
Fresh, creamy, crunchy, and packed with flavor — this low-carb salad is the perfect quick lunch, side dish, or snack!
Ingredients
- 2 large cucumbers, sliced
- 1 cup shredded cheddar cheese
- 6 slices cooked bacon, crumbled
- ¼ small red onion, thinly sliced
- ½ cup sour cream
- 2 tablespoons mayonnaise
- 1 tablespoon fresh dill, chopped
- 1 teaspoon garlic powder
- Salt and black pepper, to taste
Instructions
1. Prep the Cucumbers
Wash and slice the cucumbers into thin rounds. Pat dry with paper towels to remove excess moisture.
2. Make the Dressing
In a medium bowl, mix together the sour cream, mayonnaise, garlic powder, fresh dill, salt, and black pepper until smooth.
3. Combine Everything
Add cucumbers, cheddar cheese, bacon, and red onion to a large bowl. Pour the dressing over the top and toss gently to coat.
4. Chill & Serve
Refrigerate for 15–20 minutes for the best flavor, then serve cold and enjoy!
