Cream Cheese & Bacon Stuffed Doritos Chicken
Ingredients:
For the chicken:
- 4 boneless, skinless chicken breasts
- Salt and black pepper, to taste
- 1 tsp garlic powder (optional but recommended)
- 1 tsp paprika (optional for color and flavor)
For the filling:
- 4 oz (115 g) cream cheese, softened
- 4–6 slices cooked bacon, crumbled
- A pinch of black pepper
For coating:
- 1 egg, beaten
- ½ cup all-purpose flour (optional, helps coating stick)
- 1 to 1½ cups crushed Doritos (nacho cheese or spicy flavor works best)
For cooking:
- Light cooking spray or a small amount of oil
Instructions:
1. Prepare the chicken
- Carefully cut a pocket into each chicken breast without slicing all the way through.
- Season both inside and outside with salt, pepper, garlic powder, and paprika.
- Let it rest for about 10 minutes so the flavors absorb.
2. Make the filling
- In a bowl, mix the softened cream cheese with crumbled bacon.
- Add a pinch of black pepper and stir until smooth and creamy.
3. Stuff the chicken
- Spoon the cream cheese and bacon mixture into each chicken breast pocket.
- Don’t overfill to prevent leaking during cooking.
- Use toothpicks to secure the opening if needed.
4. Coat the chicken (for crunch)
Set up three bowls:
- Flour
- Beaten egg
- Crushed Doritos
Then coat the chicken in this order:
- Lightly dredge in flour
- Dip into egg
- Press firmly into crushed Doritos until fully covered
Make sure the coating sticks well for maximum crunch.
5. Bake the chicken
- Preheat the oven to 375°F (190°C)
- Place chicken on a baking tray lined with parchment paper
- Lightly spray the tops with oil for extra crispiness
- Bake for 25–35 minutes, depending on size
Chicken is done when internal temperature reaches 165°F (74°C)
6. Serve
- Let the chicken rest for 5 minutes before cutting
- Slice open to reveal the creamy bacon filling
- Serve with:
- Ranch or garlic sauce
- Mashed potatoes or fries
- Fresh salad
Tips for best results:
- Don’t overstuff the chicken or it may leak while baking
- Spicy Doritos give a stronger flavor kick
- Air fryer option: 350°F (180°C) for 18–22 minutes
- Letting the chicken rest helps keep the filling inside
