Keto Jalapeño Popper Cheese Bombs
Crispy Outside, Gooey Inside, Spicy, Cheesy Perfection

These bites are dangerously addictive and perfect for snacks, parties, or dipping in ranch.
Ingredients (Makes 16 bombs — ~1g net carb each)
For the dough:
- 2 cups superfine almond flour
- 8 oz cream cheese, softened
- 1½ cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese (for stretch)
- 6 slices bacon, cooked crispy and crumbled
- 4–5 fresh jalapeños, finely diced (seeds removed for less heat)
- 2 large eggs
- 1 tsp baking powder
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- 1 tbsp fresh lime juice
Optional for serving:
- Ranch dressing
- Extra lime wedges
- Sliced jalapeños
Step-by-Step Instructions
Prep
Preheat oven to 375°F (190°C). Line a baking sheet (or air fryer basket) with parchment paper. Cook bacon until crispy, then crumble. Finely dice jalapeños.
Mix the dry ingredients
In a large bowl, combine almond flour, baking powder, garlic powder, onion powder, and salt. Add diced jalapeños and toss to coat (this prevents them from sinking).
Add cheese and bacon
Add softened cream cheese, cheddar, mozzarella, and crumbled bacon to the bowl.
Bind the dough
Add eggs and lime juice. Mix with your hands or a sturdy spatula until a thick, sticky dough forms. It should hold together when squeezed.
Scoop and roll
Use a 2 tbsp cookie scoop or your hands to form 16 even balls. Place them on the parchment about 1 inch apart. They won’t spread much.
Bake
- Oven: Bake 18–22 minutes until golden brown on top and set at the edges.
- Air fryer: 350°F (175°C) for 12–14 minutes.
Cool slightly
Let them cool for 5 minutes before moving. The cheese inside will be very hot. Serve warm with ranch for dipping.
Pro Tips to Level It Up
- Control the heat: Leave some jalapeño seeds for extra spice, or remove all seeds and ribs for mild. You can swap one jalapeño for green bell pepper.
- Cream cheese hack: Microwave cream cheese for 15 seconds to soften. Cold cream cheese won’t mix well.
- Don’t overbake: They firm up as they cool. Pull them once golden to avoid dryness.
- Make ahead: Freeze the rolled balls on a tray. Bake from frozen at 375°F for 22–25 minutes.
- Extra crispy finish: Brush tops with melted butter right after baking. Sprinkle with flaky salt or parmesan.
- Dairy-free option: Use dairy-free cream cheese and vegan shreds. Add 1 tbsp nutritional yeast for a cheesy flavor.
