Southern 3-Ingredient Sausage Cheese Dip

Cheese dip is the kind of church-basement classic that disappears before you can even set the spoon down. The church ladies at our spring potluck actually told me I wasn’t allowed to show up without it this year, and they scraped the cast iron skillet completely clean. It’s creamy, meaty, and just a little bit nostalgic—exactly the kind of no-fuss recipe you can throw together after work or right before a gathering.

With only three ingredients and one pan, it’s perfect for busy weeknights, game days, or anytime you need something warm and comforting that everyone will crowd around.

 Ingredients:

  • 1 pound ground pork breakfast sausage (mild or hot)
  • 1 (10-ounce) can diced tomatoes with green chiles, undrained
  • 1 (16-ounce) block processed cheese (such as Velveeta), cubed

 Instructions:

  1. Cook the sausage:
    In a large skillet over medium heat, cook the sausage, breaking it up as it browns, until fully cooked. Drain excess grease if needed.
  2. Add tomatoes:
    Stir in the diced tomatoes with green chiles (do not drain). Let it simmer for 1–2 minutes.
  3. Add cheese:
    Reduce heat to low. Add the cubed cheese and stir continuously until fully melted and smooth.
  4. Serve hot:
    Keep the dip warm so it stays creamy and easy to scoop.

Serving Suggestions:

Serve this dip straight from a hot skillet with:

  • Tortilla chips
  • Corn chips
  • Thick-cut crackers

You can also:

  • Spoon it over baked potatoes
