Creamy Bacon Pea Salad

Ingredients

  • 3 cups frozen peas, thawed
  • 8 slices bacon, cooked crispy and crumbled
  • ½ cup red onion, finely chopped
  • 1 cup cheddar cheese, cubed or shredded
  • ½ cup mayonnaise
  • 2 tbsp sour cream
  • 1 tbsp apple cider vinegar (or lemon juice)
  • 1 tsp sugar (optional, for balance)
  • Salt and black pepper, to taste Instructions
  1. Prepare peas: Let the peas thaw completely and pat dry if needed.
  2. Cook bacon: Fry until crispy, then crumble into small pieces.
  3. Mix salad base: In a large bowl, combine peas, bacon, red onion, and cheddar cheese.
  4. Make dressing: In a separate bowl, whisk together mayonnaise, sour cream, vinegar, sugar, salt, and pepper.
  5. Combine: Pour dressing over the salad and gently mix until evenly coated.
  6. Chill: Refrigerate for at least 1 hour before serving for best flavor.

 Tips

  • Add chopped hard-boiled eggs for extra protein
  • Swap cheddar with mozzarella or feta for a twist
  • A handful of chopped fresh herbs (like parsley) adds freshness
