Chicken and Pepperoni Pizza Melts
Ingredients
- 2 cups cooked chicken, shredded or diced
- 1 cup pepperoni slices
- 8 slices of sandwich bread (Italian, sourdough, or white)
- 1 ½ cups shredded mozzarella cheese
- ½ cup pizza sauce (plus more for dipping)
- 2 tablespoons butter, softened
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
Instructions
- Prepare the filling
In a bowl, mix the cooked chicken with pizza sauce until well coated. - Assemble the melts
- Spread butter on one side of each slice of bread.
- Place 4 slices (butter-side down) on a pan or skillet.
- Layer with mozzarella cheese, chicken mixture, and pepperoni slices.
- Sprinkle garlic powder and Italian seasoning on top.
- Add another layer of cheese, then top with remaining bread slices (butter-side up).
- Cook
Heat a skillet over medium heat. Cook sandwiches for 3–4 minutes per side, until golden brown and the cheese is melted. - Serve
Remove from heat, slice in half, and serve warm with extra pizza sauce for dipping.
Tips
- Add veggies like bell peppers or mushrooms for extra flavor.
- Use a panini press instead of a skillet for crispier melts.
- Swap mozzarella with provolone or cheddar for a twist.
