Chicken and Pepperoni Pizza Melts

 Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1 cup pepperoni slices
  • 8 slices of sandwich bread (Italian, sourdough, or white)
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup pizza sauce (plus more for dipping)
  • 2 tablespoons butter, softened
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Instructions

  1. Prepare the filling
    In a bowl, mix the cooked chicken with pizza sauce until well coated.
  2. Assemble the melts
    • Spread butter on one side of each slice of bread.
    • Place 4 slices (butter-side down) on a pan or skillet.
    • Layer with mozzarella cheese, chicken mixture, and pepperoni slices.
    • Sprinkle garlic powder and Italian seasoning on top.
    • Add another layer of cheese, then top with remaining bread slices (butter-side up).
  3. Cook
    Heat a skillet over medium heat. Cook sandwiches for 3–4 minutes per side, until golden brown and the cheese is melted.
  4. Serve
    Remove from heat, slice in half, and serve warm with extra pizza sauce for dipping.

 Tips

  • Add veggies like bell peppers or mushrooms for extra flavor.
  • Use a panini press instead of a skillet for crispier melts.
  • Swap mozzarella with provolone or cheddar for a twist.
