 Slow Cooker 5-Ingredient Irish Coddle

 Ingredients

  • 6–8 pork sausages
  • 4–5 slices bacon, chopped
  • 4 large potatoes, peeled & sliced
  • 2 onions, sliced
  • 3–4 cups water or broth

(Optional: salt, black pepper, parsley for serving)

 Instructions

  1. Prep meat (optional but recommended):
    Lightly brown the sausages and bacon in a pan for extra flavor.
  2. Layer in slow cooker:
    • Start with onions
    • Add bacon and sausages
    • Top with potatoes
  3. Add liquid:
    Pour water or broth until everything is just covered.
  4. Cook:
    • LOW: 6–8 hours
    • HIGH: 3–4 hours
  5. Finish & serve:
    Season with salt and pepper, sprinkle parsley if you like, and serve hot.

 Serving tips

  • Best with crusty bread or Irish soda bread
  • You can add cabbage or carrots if you want extra veggies
