Slow Cooker 5-Ingredient Irish Coddle
Ingredients
- 6–8 pork sausages
- 4–5 slices bacon, chopped
- 4 large potatoes, peeled & sliced
- 2 onions, sliced
- 3–4 cups water or broth
(Optional: salt, black pepper, parsley for serving)
Instructions
- Prep meat (optional but recommended):
Lightly brown the sausages and bacon in a pan for extra flavor. - Layer in slow cooker:
- Start with onions
- Add bacon and sausages
- Top with potatoes
- Add liquid:
Pour water or broth until everything is just covered. - Cook:
- LOW: 6–8 hours
- HIGH: 3–4 hours
- Finish & serve:
Season with salt and pepper, sprinkle parsley if you like, and serve hot.
