Preserved Lemon & Herb Recipe
Ingredients:
- 6–8 fresh lemons (preferably organic)
- 1/2 cup coarse salt (sea salt or kosher salt)
- Fresh lemon juice (enough to cover)
- 3–4 cloves garlic (optional)
- 1 tsp black peppercorns
- 1 tsp coriander seeds
- 1 bay leaf
- Fresh herbs (parsley, thyme, or rosemary)
Instructions:
Step 1: Prepare the lemons
Wash the lemons well. Cut each lemon into quarters but keep them attached at the base (like a flower).
Step 2: Add salt
Open each lemon and pack it generously with salt, then place it into a clean glass jar.
Step 3: Pack the jar
Press the lemons down firmly to release their juice. Add garlic, spices, and herbs between the layers.
Step 4: Add liquid
Pour fresh lemon juice over everything until the lemons are fully covered.
Step 5: Let it preserve
Close the jar tightly and leave it at room temperature for 3 to 4 weeks. Shake the jar gently every few days.
When is it ready?
After a few weeks, the rind becomes soft and flavorful. This process works because salt and acidity preserve the lemons and prevent spoilage .
How to use it:
- Add to chicken tagine
- Mix into salads or couscous
- Blend into sauces or dressings
- Use with fish or grilled meat
Usually, you use only the peel, because it has the strongest flavor .

- Always keep lemons submerged in juice
- Store in the fridge after opening
- They can last for months
