Ingredients
1 lb (450 g) ground beef
1 small onion, finely diced
3 cloves garlic, minced
4 cups potatoes, peeled and diced (Russet or Yukon Gold)
4 cups beef broth
1 cup whole milk
1 cup heavy cream
2 cups shredded cheddar cheese (sharp or mild)
2 tablespoons butter
2 tablespoons all-purpose flour
1 teaspoon salt (or to taste)
½ teaspoon black pepper
½ teaspoon paprika
½ teaspoon dried thyme or Italian seasoning
Optional: ½ cup chopped carrots or celery
Optional garnish: chopped parsley, green onions, extra cheese, or crispy bacon bits
Instructions
1. Brown the Beef
In a large pot or Dutch oven over medium heat, cook the ground beef until browned. Drain excess grease if needed.
2. Sauté Aromatics
Add the diced onion to the pot and cook for 3–4 minutes until softened. Stir in the garlic and cook for 30 seconds until fragrant.
3. Add Potatoes & Broth
Add the diced potatoes (and carrots/celery if using), beef broth, salt, pepper, paprika, and thyme. Bring to a boil, then reduce heat and simmer for 15–20 minutes, or until the potatoes are fork-tender.
4. Make It Creamy
In a small saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute. Slowly whisk in the milk and cream until smooth and slightly thickened.
5. Combine & Add Cheese
Stir the creamy mixture into the soup. Reduce heat to low and add the shredded cheese, stirring until fully melted and smooth.
6. Taste & Adjust
