Lemon Truffles

These lemon truffles are a quick, no-bake, low-carb dessert that’s perfect for satisfying your sweet tooth in just 15 minutes.

Ingredients:

  • 1 cup almond flour
  • 1/4 cup powdered erythritol (or your preferred low-carb sweetener)
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons unsalted butter, melted
  • 1/2 teaspoon vanilla extract
  • Optional: unsweetened shredded coconut or cocoa powder for rolling

Instructions:

  1. Mix dry ingredients: In a medium bowl, combine the almond flour, powdered erythritol, and lemon zest.
  2. Add wet ingredients: Stir in the melted butter, lemon juice, and vanilla extract until the mixture comes together.
  3. Form truffles: Using your hands or a small cookie scoop, shape the mixture into small balls.
  4. Coat (optional): Roll each truffle in shredded coconut or cocoa powder if desired.
  5. Chill: Place the truffles in the refrigerator for at least 10 minutes to firm up before serving.
