Pineapple Cake Bars
Ingredients
Crust & Topping:
- 1½ cups all-purpose flour
- ¾ cup cold butter, cut into cubes
- ½ cup sugar
- Pinch of salt
Filling:
- 2 large eggs
- ½ cup all-purpose flour
- 1 cup sugar
- 1 can (about 15 oz / 425 g) crushed pineapple, drained
- ½ cup sour cream
- Pinch of salt
Optional Glaze:
- 1 cup powdered sugar
- 1 tsp vanilla extract (or coconut extract)
- 2 tbsp milk or half-and-half
Instructions
- Preheat oven to 350°F (180°C). Grease a 9×13 inch baking pan.
- In a bowl, combine flour, sugar, salt, and cold butter. Use your fingers or a pastry cutter to make a crumbly mixture. Reserve about 1 cup of the crumbs for topping. Press the remaining crumbs into the bottom of the prepared pan to form the crust. Bake for 15 minutes until lightly golden.
- In another bowl, whisk together eggs, sugar, flour, salt, drained pineapple, and sour cream until well combined. Pour this mixture over the pre-baked crust.
- Sprinkle the reserved crumb mixture evenly on top.
- Bake for about 1 hour, or until the top is golden and the bars are set.
- If desired, prepare a glaze by mixing powdered sugar, vanilla, and milk. Drizzle over the warm bars.
- Allow to cool, then cut into squares and serve.
Tips
- Add shredded coconut or chopped nuts on top for extra texture.
- Serve with vanilla ice cream for a delicious dessert.
