Vegetable Soup (Healthy & Easy)
Ingredients:
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 potatoes, diced
- 1 cup broccoli florets
- 1 zucchini, chopped
- 1 celery stalk, chopped
- 1 tomato, chopped (optional)
- 5 cups vegetable broth (or chicken broth)
- Salt and pepper to taste
- 1/2 teaspoon turmeric (optional)
- Fresh parsley or cilantro, chopped
Instructions:
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic, and cook until soft and fragrant.
- Add the carrots, potatoes, celery, and zucchini. Stir for 3–4 minutes.
- Pour in the broth and bring to a boil.
- Reduce the heat and let it simmer for 15–20 minutes.
- Add the broccoli and tomato, and cook for another 5–7 minutes.
- Season with salt, pepper, and turmeric.
- Garnish with fresh parsley or cilantro and serve hot.
Tips:
- You can add chicken or beef for extra protein
- Blend the soup for a creamy texture
- A squeeze of lemon at the end adds great flavor
