Baked Sweet and Sour Chicken Recip
Ingredients:
– 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
– 1 cup pineapple chunks (fresh or canned)
– 1 large bell pepper, diced
– 1 large onion, diced
– 1/2 cup ketchup
– 1/4 cup brown sugar
– 2 tablespoons apple cider vinegar
– 1 teaspoon soy sauce
– 1/2 teaspoon garlic powder
– Salt and pepper, to taste
– 2 tablespoons vegetable oil
Instructions:
1. Preheat oven to 400°F (200°C).
2. In a large bowl, whisk together ketchup, brown sugar, apple cider vinegar, soy sauce, and garlic powder.
3. Add the chicken to the bowl and toss to coat.
4. In a large skillet, heat 1 tablespoon of oil over medium-high heat.
5. Add the diced onion and bell pepper and cook until tender, about 5 minutes.
6. Add the pineapple chunks and cook for an additional 2 minutes.
7. Add the cooked vegetables to the bowl with the chicken and toss to combine.
8. Transfer the chicken and vegetable mixture to a 9×13 inch baking dish.
9. Bake for 20-25 minutes or until the chicken is cooked through.
10. Serve hot over rice or noodles.
