Slow Cooker Crack Chicken and Rice
Ingredients
- 2 lbs boneless, skinless chicken breasts
- 1 (10.5 oz) can cream of chicken soup
- 1 (8 oz) package cream cheese, softened
- 1 (1 oz) packet ranch seasoning mix
- 1 1/2 cups uncooked long-grain white rice
- 3 cups chicken broth
Instructions
- Add the chicken
Place the chicken breasts in the bottom of your slow cooker. - Mix the sauce
In a bowl, combine the cream of chicken soup, softened cream cheese, and ranch seasoning mix. Stir until smooth. - Pour over chicken
Spread the mixture evenly over the chicken. - Cook
Cover and cook on:- Low: 6–7 hours
- High: 3–4 hours
- Shred the chicken
Once cooked, shred the chicken directly in the slow cooker using two forks. - Add rice and broth
Stir in the uncooked rice and chicken broth. Mix well. - Cook again
Cover and cook on High for 1–2 hours, or until the rice is tender and fully cooked. Stir occasionally if possible.
Optional Add-Ins
- 1–2 cups shredded cheddar cheese
- Cooked bacon bits
- Chopped green onions
Tips
- If the rice absorbs too much liquid, add a splash of broth.
- For extra creaminess, stir in a little more cream cheese at the end.
- Make sure the rice is fully submerged to cook evenly.
