 Creamy Cheesy Beef & Tomato Dip

Ingredients:

  • 1 lb (450g) ground beef
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (10 oz) diced tomatoes (with juices)
  • 1/2 cup diced green bell pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese (softened)
  • 1/2 cup heavy cream or milk
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt (adjust to taste)
  • 1/2 teaspoon chili flakes (optional, for a little heat)

Instructions:

  1. Cook the beef
    In a large skillet or pot, heat olive oil over medium heat. Add the ground beef and cook until browned. Drain excess fat if needed.
  2. Add aromatics
    Add chopped onion and cook for 2–3 minutes until soft. Stir in garlic and cook for another 30 seconds.
  3. Add vegetables
    Mix in diced tomatoes and green bell pepper. Let it simmer for about 5 minutes so the flavors combine.
  4. Make it creamy
    Lower the heat and add cream cheese, heavy cream, and shredded cheddar cheese. Stir continuously until everything melts into a smooth, creamy mixture.
  5. Season
    Add paprika, salt, pepper, and chili flakes. Taste and adjust seasoning as needed.
  6. Simmer
    Let it cook on low heat for another 5–10 minutes until thick and bubbly.

Serving Suggestions:

  • Serve hot with tortilla chips, toasted bread, or crackers
  • Also great as a topping for baked potatoes or even pasta

Tip:

For extra flavor, you can add a little taco seasoning or a splash of hot sauce
