Crispy Garlic Butter Roasted Potatoes
They’re crispy on the outside, soft on the inside, and packed with flavor
Ingredients
- 2 lbs potatoes (Yukon gold or baby potatoes work best)
- 3 tablespoons olive oil
- 3 tablespoons butter, melted
- 4 cloves garlic, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried parsley (or fresh)
- Optional: grated Parmesan cheese
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and cut the potatoes into halves or bite-sized pieces.
- In a large bowl, mix olive oil, melted butter, garlic, salt, pepper, and paprika.
- Add the potatoes and toss until fully coated.
- Spread them on a baking sheet in a single layer.
- Roast for 35–45 minutes, flipping halfway through, until golden and crispy.
- Sprinkle with parsley and Parmesan before serving.
