Crockpot Cowboy Taco Noodles

Ingredients:
- 1 lb ground beef, browned and drained
- 1 packet taco seasoning
- 1 (10 oz) can Rotel (diced tomatoes with green chilies)
- 1 (15 oz) can tomato sauce
- 1½ cups beef broth
- 8 oz cream cheese, softened and cubed
- 1½ cups shredded Mexican blend cheese
- 12 oz egg noodles, cooked according to package instructions
Instructions:
- Brown the Beef:
In a skillet over medium heat, cook the ground beef until fully browned. Drain any excess grease to avoid a greasy sauce. - Add to Crockpot:
Transfer the cooked beef to your crockpot. Add the taco seasoning, Rotel, tomato sauce, and beef broth. Stir everything together until well combined. - Slow Cook to Perfection:
Cover and cook on Low for 4–5 hours or High for 2–3 hours. This allows all the flavors to blend beautifully. - Make It Creamy:
About 20–30 minutes before serving, add the cubed cream cheese. Stir occasionally until it melts completely and creates a rich, creamy sauce. - Add Noodles & Cheese:
Stir in the cooked egg noodles and shredded Mexican cheese. Mix well until the cheese is fully melted and everything is coated in that creamy, savory sauce. - Serve & Enjoy:
