Garlic Butter Beef Bites with Creamy Mashed Potatoes

Ingredients
For the Beef Bites:
- 1 lb (450 g) beef steak (sirloin or ribeye), cut into bite-sized cubes
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried thyme or Italian seasoning
- 1 tablespoon fresh parsley, chopped (for garnish)
For the Creamy Mashed Potatoes:
- 2 lbs (900 g) potatoes, peeled and cut into chunks
- 4 tablespoons butter
- ½ cup warm milk (or heavy cream for extra richness)
- Salt and black pepper, to taste
Instructions
1. Make the Mashed Potatoes
- Place the peeled potatoes in a large pot and cover with salted water.
- Bring to a boil and cook for about 15–20 minutes, or until fork-tender.
- Drain well and return potatoes to the pot.
- Add butter and warm milk, then mash until smooth and creamy.
- Season with salt and pepper to taste. Cover and keep warm.
2. Cook the Beef Bites
- Pat the beef cubes dry with paper towels (this helps them sear better).
- Season with salt, pepper, paprika, and thyme.
- Heat olive oil in a large skillet over medium-high heat.
- Add beef in a single layer (work in batches if needed).
- Sear for 2–3 minutes per side until browned and cooked to your liking.
- Reduce heat to medium, then add butter and minced garlic.
- Stir and spoon the melted garlic butter over the beef for 1–2 minutes until fragrant.
3. Assemble & Serve
- Spoon a generous portion of mashed potatoes onto each plate.
- Top with garlic butter beef bites.
- Drizzle extra garlic butter from the pan over everything.
- Sprinkle with fresh parsley for a fresh finish.
